Chef Travis Tveit

Chef Travis Tveit has been a staple in the local culinary community for many years. He graduated from Oregon Culinary Institute in 2010 and has since worked as a chef, pastry chef and private caterer among many other titles. Winning Spokane’s Chef Battle in 2019 and going on to nationally compete in Las Vegas, where he placed third.  

Chef Travis has opened his first restaurant called Chowderhead, a place specializing in soups, small plates and comfort foods. All of which are scratch made, local when possible, and always delicious.

 

Course 1: Arancini with romesco
Fried risotto balls with cheese and prosciutto, romesco sauce, olive oil, parmesan reggiano

Course 2: Panzanella
Tomatoes, stale bread, fresh basil, olive oil

Course 3: Porchetta with grilled peaches and arugula
Herb and garlic roasted porchetta, grilled local peaches and fresh arugula with lemon

Course 4: Tiramisu
Espresso soaked ladyfingers, mascarpone, cocoa powder

Course 1: Cougar Gold Stuffed Mushrooms
Crimini mushrooms stuffed with cougar gold cheddar, breadcrumbs, chives

Course 2: Pumpkin soup
Fall spices, creme fraiche

Course 3: Steelhead and apples
Pan seared steelhead, root vegetables, fresh green apple, beurre blanc

Course 4: Apple Crisp, Vanilla Ice Cream
Local Apples, streusel, vanilla ice cream, turbinado sugar

Course 1: Brandada de Bacalao
Salt cod with potatoes and olive oil, toast, fresh herbs

Course 2: Gazpacho
Roasted peppers, cilantro, fresh lime

Course 3: Pork, Potatoes, Paprika
Roasted pork tenderloin with Spanish potatoes, olive tapenade and smoked romesco sauce

Course 4: Basque Cheesecake
Basque Cheesecake, Malbec syrup
